(Pork meatballs with peas and rich tomato sauce)
Ingredients
5 gloves of garlic
1 white onion
3tbsp sage
10lb minced pork
Salt and pepper
2tbsp of mixed herbs
3tbsp of caster sugar
4tbsp of tomato paste
300ml red wine
1 large tin of chopped tomatoes
Method
Preheat your oven to 200 degrees.
Blend onions, garlic and sage in a food blender, place minced pork into a large metal bowl, and add contents of the food blender to the minced pork and season.
Mix all the ingredients together well. Roll into balls (around the size of a golf ball), seal under the grill until brown.
Place the meatballs into a gastro tray and add red wine, sugar, herbs, tomato paste followed by chopped tomatoes.
Finish in the oven for about 40 minutes (take one of the meatballs out with a spoon, break open to see if its cooked right though)
