A MUM of three from Winwick is celebrating her book release after running her successful business for just 11 months.

Laura Billington is releasing her book, Inspired Grazing, on 28 June after launching her business in July last year.

Inspired Grazing is set for release on June 28 and will feature a wide variety of cheeseboards which ‘are bound to impress no matter what the celebration’ and will ‘take you on a tour of the seasons.’

The forty three year old said: ‘‘I thought we need a cheeseboard cookbook for the UK, but one with a bit of a twist where you’re in charge of what you do.

‘‘I’ve got a few tips of how I would do it, but ultimately it’s what you like.’’

‘‘To be able to guide something to create their own little pieces of art means the world to me.

‘‘It’s not just a cookbook, it’s a piece of inspiration.

‘‘The excitement and feeling knowing people are actually going to have this cookbook what I’ve written and will be making cheeseboards and creating stuff off the back of this book is just amazing.’’

Wanting to do something creative and help the local economy, Laura created her business, Graze Cheshire, in July 2020 during the pandemic.

After twenty years working in the legal industry, Laura began making and selling food platters and realised how much she enjoyed the creativity side.

The business provides gourmet grazing boxes and platters, using fresh seasonal produce.

Since starting the business, Laura buys all her ingredients such as vegetables, cheese, chutney, from Cheshire based companies.

The business owner said: ‘‘I absolutely adore what I do and I have so much fun with it, I’m really creative with it.

‘‘With all the negativity going on, I just wanted to take something completely negative and flip it on its head.’’

Inspired Grazing is a 192 page paperback and will be £22.

It will be available to purchase online from Bookshop.org, Amazon, www.mezepublishing.co.uk and in all good bookshops including Waterstones.
