Business is blooming at Counter’s Coffee Bar just two weeks after reopening the doors at the former Parr’s Bank building.

Owners Pavan and Yaad Johal have been renovating the grade two listed building in the town centre since they purchased it in March last year.

Battling through the pandemic, the couple’s plans changed course and they decided to open up a coffee shop on the ground floor, which welcomed its first customers on April 12.

Since then, the Victorian Building on Winwick Street, which dates back to 1877, has been the go-to place for hot drinks, breakfast and lunch orders with new items added to the speciality menus daily.

The Appleton couple have also secured a liquor licence and opened until 8pm last weekend serving alcoholic drinks that visitors have enjoyed with the new mezze boards and sharing platters on the heated terrace, which is decorated with stunning floral displays – an elegant look that continues throughout the building.

Pavan, who is 28, said: “We’re slowly making changes to our opening hours and our menus as we learn what our customers want.

“We want to continue delivering the same high quality service when we’re able to welcome more people into the venue.

“The heated terrace was popular last weekend with drinks and snacks after work and the romantic setting meant we saw some couples enjoying date nights as well.

“We will be working with people in the industry to ensure all of our customers have the perfect experience with us, whichever special occasion they are celebrating.”

The upper floors of the building, including the old banking hall, will be hosting events later this year with enquiries about wedding receptions and birthday parties already being taken.

Pavan and Yaad are hoping to attract business networkers who want to use the space for meetings and conferences and plans are also in place for an aparthotel with 16 guest bedrooms.
