DROOLING over pancake pictures all day?

We headed over to Cafe at the End of the Universe in Warrington Market to get some tips on how to make the perfect American style fluffy pancakes with a peanut butter and banana topping. 

Ingredients to make 12 small pancakes

  • 150g plain flour
  • Half teaspoon of salt
  • 1 tablespoon of baking powder
  • 1 teaspoon caster sugar
  • 250ml buttermilk or 200ml normal milk
  • 1 egg
  • Tiny butter of butter to fry

Method

Put all the dry ingredients in a bowl and mix together. 

Separate one egg. 

Add another teaspoon of caster sugar to the bowl with the yolk. 

Whisk both the egg white and the egg yolk. 

Add the milk to egg white and then add the egg yolk to the bowl. 

Make a well in the bowl of dry ingredients and gradually pour in the milk and egg mixture. Keep stirring - it doesn't matter with fluffy pancakes if the mix is a little bit lumpy. 

Transfer the mix into a jug and pour into the pan. 

Cook on one side for 30 seconds to one minute and then turn over. 

Add the banana to the pan to cook. 

Once cooked, stack with peanut butter and banana.
